Tzatziki Recipe
Tzatziki is tradition Greek cucumber and yoghurt cold soup which is very similar to its Bulgarian counterpart 'Tarator'.
It can be served alone as a starter or a refreshing snack and it can also be used as a dip for pita bread or a sauce for pita sandwiches (wonderful with kebab meat and salad!).
The amount of garlic can be increased or reduced depending how much you like garlic, or if you have a date!
Suitable for vegetarians, quick to prepare and a delicious end result!
Ingredients:
500 ml of thick Greek yogurt
6 cloves of garlic
Half a cucumber
Fresh dill
2 teaspoons of fresh lemon juice
Olive Oil
Instructions:
Grate the cucumber and crush/chop the garlic.
Mix a tablespoon of olive oil and the lemon juice in a bowl.
Mix in the yogurt slowly and ensure it is thoroughly mixed with the oil.
Add the garlic and cucumber and continue to stir until you have a well mixed consistency.
Garnish with fresh cucumber and a sprinkling of chopped fresh dill and serve chilled.
